The Day With the Cheesecake. Again.

As it’s the national MacMillian Coffee Morning tomorrow and - as well you know - I can bake but cannot cook, I’ve decided to whip up my Five Steps to the Perfect Strawberry Cheesecake (I know - the recipe isn’t there anymore. How annoying is that?). And because Teesee, Sharon and I have been swapping recipes like grannies over a garden fence, I figured I’d contribute this one. Enjoy!

You Will Need:
12 Digestive biscuits
3 tablespoons of butter
500g of mascarpone cheese
1 cup of strawberries (it’s not an exact science and depends upon how much you like s’berries)
50g icing sugar

You Will Need To:
1. Crush digestives with mallet/rolling pin until only fine crumbs remain;
2. Melt butter in pan. Stir in biscuit crumbs until it is all coated with butter;
3. Leave to cool. Then squash base into the bottom of a greased bake tin with loose bottom. Press down tightly with back of metal spoon;
4. Squash the strawberries into mush (this is a good recipe for anger management). Add icing sugar, and then the mascarpone cheese. Mix well. Add to top of biscuit base, spreading evenly;
5. Leave in fridge for an hour or two . . . or for however long you can bear to wait.

    I’m going to have to invite some friends round when I next make this and Sharon’s cookies, otherwise I’ll be in the gym for two months solid.

    When I get home later I will Google “Digestive biscuits” and “mascarpone cheese” and “icing sugar” to figure out where I can get some and what the heck digestive biscuits are and then maybe I will try the recipe :-)

    Man, Val - you haven’t lived if you haven’t had a digestive biccie. And no mascarpone cheese?! WTF?! That’s Italian, not British! Maybe you call it something different over there?

    Heh. Usually people here use graham crackers for cheesecake bases. If I make one, I usually just buy a graham cracker crust, already in shape. ;-)

    I’m sure one can get mascarpone here if you know where to look but I’d never personally heard of it before. When I make a cheese cake I use cream cheese and because I’m lazy and don’t know how otherwise, seasoning by Homemade Gourmet. But it’s sooo good.
    Wikipedia says “According to popular cheese reference website cheese.com, ‘[Mascarpone] is not cheese at all, but rather the result of a culture being added to the cream skimmed off the milk, used in the production of Parmesan.’” We do have Parmesan ;-)

    Boring? Well, they are a bit plain but they are nice. You need to try one dunked in tea!

    On an unrelated note, (and non spammy comment :p) what if I were swap the digestive base for a plain hobnob one? Would it make much difference? I <3 hobnobs.

    This sounds very, very yummy. I really want to try it out, but it’s incredibly difficult to find mascarpone cheese up north so I shall be keeping an eye out for it all weekend. I’ve always wanted to try making cheesecake.

    Am in awe of my overseas friends who have lived life without digestive biscuits. Poor you!

    And no mascarpone?! Well, that’s Italian, not British, so not sure why you don’t have that either!
